Lechonera la Borinqueña brings the tradition of the island's roadside lechoneras to South Texas. Every day the trailer—flying both the Puerto Rican and American flags—fires up to slow-roast whole pork shoulder until the skin cracks and the meat falls apart, exactly the way it's done back home.
Customers keep coming back for the portions as much as the flavor: regulars say a single plate of lechón, rice with pigeon peas, and mashed cassava is easily enough for two meals. One regular even turns the leftover pork into a Cuban sandwich the next day — a customer favorite we've started hearing about again and again.
It's a small, family-run operation with a simple goal: cook the food the way abuela made it, serve it fast and friendly, and make sure nobody in Schertz has to drive to San Antonio for real Puerto Rican food.
